What to do with meat from broth? Don’t throw it away, reuse it!

Cooking broth is our Polish tradition, although it is also quite popular in many other countries. It is a perfect dish, being a base for various meals. If you have ever thrown away meat after broth, you should read this article! We will advise you what you can do with the meat from the broth, so that it does not go to waste.

Homemade dumplings

Your mother or grandmother will surely know this method for using up meat from broth. You can make tasty and healthy dumplings out of meat from broth. If you use, for example, beef and chicken thighs, you can make a wonderful stuffing for homemade dumplings or ravioli. All you need to do is to take the meat out of the broth and then grind it

It is also a good idea to add about two tablespoons of already cooked broth, as well as spices such as garlic, pepper, salt and sweet paprika powder. To emphasize the flavor you can add fried spring onions. The stuffing will be much spicier and extremely expressive. Many cooks also advise mixing minced meat from broth with previously fried sauerkraut, shredded with a knife. The meat will have a delicate mousse form, and the sauerkraut will give the stuffing a different texture and a slightly sour taste.

Quick salad for dinner

If you don’t have time to make dumplings, we also have another proposal for using meat from broth. Chicken thighs or breasts are often left over from broth, which can be used later as the main ingredient in a salad – for example with fried chicken breast. It should be cut into small pieces beforehand and then fried in a little oil. It tastes perfect with curry or sweet paprika, cayenne bell pepper and cinnamon. Combine the fried chicken with a bit of mayonnaise, rice, corn, diced pineapple and grated cheese. This is a perfect salad for a party or dinner. It can also be served with chopped parsley.

A dish for children

The meat from the broth can also be used to make a tasty and healthy dish for children. Cut it into small pieces or shred it. Pour some water or previously boiled broth into a pot. Grate the vegetables of your choice – leek, carrot, parsley and celery. You can also add pieces of kohlrabi and celery to the dish. Cook the meat with the vegetables until the vegetables are tender. Season the dish with salt and pepper to taste. You can also whisk in cream mixed with a little flour. The dish goes perfectly with rice or potatoes.

Christmas pate

When you’ve made the stock for borscht or sour soup, you’ll probably have some meat left over. Instead of buying large quantities of sausages for the Christmas table, make your own homemade pâté. Grind the meat on small grinders, seasoning it with salt and pepper. You can also add ground carrots from the broth, onion, and leek to the middle

This vegetable is often thrown away, and this is a huge mistake. It is also worth grinding the vegetables together with the meat, so that the pate has the right taste and aroma. Add ground meat to a baking tray lined with baking paper and sprinkle a little breadcrumbs on top. Bake the pate in an oven preheated to 160 degrees for about 30-40 minutes. It tastes perfect on sandwiches, with the addition of horseradish.

Potato pancakes with meat

Surely many people in your family love potato pancakes. Interestingly, you can also make them with the addition of meat from the broth. Finely grate the potatoes and add grated spring onions to them as well. Grind the meat from the broth and add it to the potatoes. Mix together, seasoning with salt and pepper. Add a little flour if the consistency is too loose. Fry for a few moments on both sides. You can serve them with sour cream or tomato sauce. You can shape the pancakes and coat them in breadcrumbs before frying. However, if your diet does not allow you to use a lot of carbohydrates, stay with just flour.
