Recipes for simple dishes

Raspberry and blueberry cocktail

Ingredients:

  • handful of raspberries,
  • handful of blueberries,
  • natural yoghurt
  • 1 teaspoon of honey,
  • ice and blackberry juice.

Preparation: Blend all the ingredients. Importantly, they are all natural and healthy. Such a smoothie can be a support for your immune system.

Salad with lentils and roasted vegetables

Ingredients:

  • 1 ½ cups of cooked green lentils
  • 2 carrots (roasted in the oven or on the grill)
  • 2 parsnips (pre-baked in oven or on grill)
  • ½ celery (pre-cooked in oven or on grill)
  • ½ teaspoon cumin
  • 3 Tbsp rapeseed or linseed oil or other oil
  • 1-2 cloves of garlic
  • 1 large handful of walnuts
  • 1 Tbsp chopped green dill
  • 1 Tbsp chopped green parsley
  • ½ lemon
  • 1-2 Tbsp honey (optional)
  • salt, pepper to taste

Preparation: add the finely diced roasted vegetables to the cooked and cooled lentils. Then chop or press the garlic, add chopped nuts, dill and parsley. Combine everything with your choice of oil and lemon juice and honey. Mix well, seasoning with salt and pepper. You can refrigerate the salad before serving. What is important, all ingredients can be sourced locally, which fits perfectly with the idea of slow food.

Green pizza

Ingredients:

Dough:

  • 2 cups buckwheat flour.
  • 5 tablespoons of oil,
  • ½ teaspoon salt,
  • approx. 1 cup water,
  • 1 tsp dry yeast.

Pesto: basil, sunflower seeds, olive oil, garlic clove, lemon juice, Parmesan cheese (optional).

Filling:

  • 1 large zucchini,
  • goat cheese (sheep cheese, tofu),
  • rocket,
  • pumpkin seeds,
  • salt, pepper.

Spread the rolled out dough with pesto. On it grate the goat’s cheese and arrange the zucchini slices, bake at 190 degrees until browned. After removing from the oven, sprinkle with arugula and roasted pumpkin seeds. Sprinkle with colored pepper. This dish is a healthy alternative to fast food, and since slow food not only promotes local food but also aims to promote food culture, green pizza fits perfectly into this movement.

The main goals of slow cooking include promoting a life in harmony with nature, a variety of dishes and raising awareness of organic food production. That’s why it’s worth delving into this topic and using the recipes we propose.
